Why does seasonality matter? Ingredients harvested at their peak are more flavorful, more nutritious, and more sustainable. A tomato picked in August tastes nothing like one grown in a hothouse in December. When we cook with what nature provides at the right time, we don't need to overcomplicate things — the ingredients speak for themselves.
Our menu changes subtly throughout the year to reflect what's freshest. Spring brings tender asparagus, peas, and morel mushrooms. Summer delivers heirloom tomatoes, sweet corn, and stone fruits. Autumn is all about squash, wild mushrooms, and hearty root vegetables. Winter calls for braised meats, citrus, and preserved goods.
